Recipe Flash: Ricotta Cookies

Fragrant with freshly grated lemon zest, these lighter than air cookies will brighten up any dreary winter day!  From Lidia's Italy, they are a cinch to make.  After cooling, dip the tops into a lemon/confectioner's sugar mixture.  But, if for some reason, you don't want the icing, they are just as delicious without it.
