Direct from the UK: Yo! Sushi, Paramus

An innovative concept in the “fast casual” dining market has landed in Paramus. Yo! Sushi opened its first US location in April and it’s already a big hit!

Yo! Sushi’s management transported the proven formula of quality ingredients, enthusiastic service, and fun (think conveyor belt-delivered sushi!) from around the world (where it already has 87 outlets) to the Garden State Plaza, and I was happy to test out the concept recently.

My first reaction to the idea of food being delivered on a conveyor belt was “ohhhhhhK, let’s see how this works.” You read that correctly. The sushi bar options make their way around the restaurant from the kitchen to your table via a tiny conveyor belt. After settling into a booth next to the open kitchen, and seeing the adorable little plates and bowls going around, I warmed up to the idea.

When you see an interesting looking dish roll by you, you simply pluck it off the belt and start eating (no waiting!). Each table (or counter seat) has soy sauce, ginger, and wasabi jars so you can customize your sushi as you see fit. You might ask how they know what your bill is if you are essentially ordering and serving yourself. Well, all the bowls on the conveyor belt are different colors. At the end of the meal, your server adds up the bowls by color and that’s your bill (pretty easy).

You might think, as I originally did, that this is just a cute gimmick with so-so food. Guess again! Top quality seafood delivered daily from local purveyors, thorough staff training (both kitchen and wait staff), and innovative recipes were mentioned as the bedrock of Yo! Sushi’s success when I spoke with Darren Wightman, the company’s VP of Operations, a few days after my visit. He told me that a London entrepreneur with no food & beverage experience started Yo! Sushi in 1997. What he did have was rock and roll production experience and that totally comes through when you spend time in the restaurant (see lava lamps below).

I was interested in how much and what kind of training the kitchen staff gets. Each location’s head chef and sous chef spend time in London with the Executive Chef to thoroughly learn from the company’s recipe bible, but they are also encouraged to experiment and innovate when they return home.

Here’s part of the fun experience at Yo! Sushi: each table has a call button of sorts to summon your server if you’d like to order off the menu (these reminded me of high-tech lava lamps). Press the button and the “lava lamp” turns from blue to red so your server knows you need something. Clever. Besides traditional sushi items, Yo! Sushi offers many hot items (ordered from a server), such as dumplings, beef skewers, spring rolls, and soft shell crab tempura (delicious!). In addition, there are quite a few choices of noodle and rice dishes (and many vegetarian options) that looked good. I loved the Blossom Roll (crunchy shrimp roll topped with spicy tuna and a sweet, sticky soy glaze), and the Salmon Avocado Maki (salmon, avocado and mayonnaise in sesame soy paper).

During my visit I noticed an interesting looking machine in the kitchen and Mr Wightman told me it was their “sushi robot.” A member of the kitchen staff drops cooked rice into the top of the machine and out pops perfectly formed rice that the chefs top with salmon or tuna, etc.

The restaurant has a casual, hip, feel to it. And I think shoppers will feel comfortable stopping in for a quick bite, or meeting friends after work. In the near future, they will offer takeout and catering, and even though the majority of the mall is closed Sundays, Yo! Sushi, along with the other mall restaurants, is open.

I asked Mr Wightman how they chose New Jersey for their first foray into the states. He told me that they are excited to be here; they love the demographic  - young, vibrant, food-centric.

Bergen County Firefighter's Food Face-Off!

Looking to add a little extra fun to this weekend’s Father’s Day activities? Well, if you are in the north Jersey area, stop by Fairway Market in Paramus for the third annual FIREFIGHTERS FOOD FACE-OFF! This grilling “throwdown,” pits several of Bergen County’s firehouses against one another to prove which one has the best barbecue.

The winning firehouse will not only receive bragging rights as the best grillers in Bergen County, but also the opportunity to name the charity of its choice to benefit from Fairway’s “NJFD Shopping Day,” which the Paramus store will host on behalf of the winning team’s favorite charity.  All proceeds from the $2 charge for food at the event will also go toward the winning firehouse’s charity of choice.
2012 Winners

Participating firehouses include the Park Ridge Fire Department, Ridgewood Fire Department, and Hackensack Fire Department. The firefighters will compete to cook their tastiest ribs, burgers, chicken or vegetable skewers, plus a secret ingredient that will only be unveiled once the contest has begun.

In addition to the food and festivities and in honor of all dads on Father’s Day, professionals from the Hackensack University Medical Center will be at the Firefighters Food Face-Off to answer questions and provide valuable health information.

It all takes place Sunday, June 16 at high noon in the parking lot behind Fairway Market’s Paramus store in the Fashion Center Mall on Route 17 in North Paramus, NJ (RAIN OR SHINE).

Fairway Market Paramus Hosts Shopping Night

TO HONOR THE PARK RIDGE FIRE DEPARTMENT, WINNERS OF THE FAIRWAY FIREFIGHTERS FOOD FACE OFF, FAIRWAY MARKET WILL HOST A SHOPPING NIGHT ON WEDNESDAY, AUGUST, 22, 2012 AT THE PARAMUS STORE, AND WILL DONATE A PORTION OF PROCEEDS TO THE MARY THERESE ROSE FUND.

In honor of the Park Ridge Fire Department’s dedication, bravery, and volunteerism—and for placing first in Fairway’s Firefighter Food Face-Off in June, Fairway Market is hosting a Shopping Night on Wednesday, August 22, 2012 from 4 p.m. to 9 p.m., at the Paramus store (Fashion Center Mall Route 17) with 25% of all sales going to Mary Therese Rose Fund, an organization that provides children with disabilities the medical provisions and aid that their insurance may not cover. With proper donations, these disabled children are allowed to lead a normal, happy childhood despite their limitations. The Park Ridge Fire Department beat out Ridgewood Fire Department and West Paterson Fire Department in the second annual Fairway Firefighters Food Face-Off. The winning team won a $500 gift card to shop at Fairway, plus they were able to select the good cause that will receive the 25% of proceeds from the Shopping Night. Mark Eisen, a member of the winning BBQ team, said the Park Ridge Fire Department is delighted to assist such deserving youngsters with a helpful donation.
Fairway Market has a longstanding commitment to firefighters, exemplified after the 9/11 tragedy, when Fairway adopted local firehouses and supplied food for them throughout the search and clean-up process. In addition to the Firefighter Food Face-Off events, firefighters receive a shopping discount at Fairway’s eleven locations.

To participate in the Shopping Night, Fairway customers need to register at an in-store table where they will get a form to present to the cashier when they are checking out.

Bucu Burger Bar and Bakery

Burgers AND a bakery?  Bucu stands for Burgers and Cupcakes. What??? An interesting establishment has popped up in Paramus offering burgers and house-made cupcakes.  Where two of my favorite foods are involved, I knew I would have to investigate.

Started by Rick Ross and his wife, Kathy, they got the idea for Bucu as a compilation of everything people like: burgers and shakes, cupcakes, ice cream. They have not cut corners on any of the ingredients. The meat supplied by Pat LaFrieda (you’ve heard of celebrity chefs, LaFrieda is a celebrity butcher), is a special formulation made just for Bucu. The burgers are on the smaller side, as compared to the burger towers you might get at other joints, and while the meat had a nice texture, it was overdone for my taste. The people manning the counter do not ask how you’d like your burger cooked and when I spoke to Ross later, he assured me that you can get a burger cooked to order. Next time, I’ll be ordering up a rare, juicy burger-cheese combo.

The tidy menu offers 5-6 “composed” burgers and the option to “build-a-burger.”  Some of the composed options include the “Jersey Burger” (applewood smoked bacon, blue & cheddar cheeses, topped with grilled onions), the “SB 48 Burger” (cheeseburger piled high with hand-cut fries and chili), and the “Pig Out Burger.”  We sampled this last burger because we thought it was actually a pulled pork sandwich, but it’s really a burger topped with pulled pork, Jalapeno Jack cheese, and horseradish coleslaw.

We loved the Haystack Onions – thinly sliced and so crispy with not a trace of grease. The Hand-cut Fries were nicely salted and seasoned.

Bucu also offers chicken wings, hot dogs, salads, and a few sandwich choices.  We didn’t sample any of these because, really, we came for the burgers.  Oh, and maybe, a cupcake.

Kathy is the head baker and creator of all the cupcake and cookie recipes.  She uses only Callebaut chocolate and rotates the selection of cupcakes daily, ranging from carrot to red velvet and everything in between.  I forced myself to try the Pistachio and Coconut.  Both had a really nice crumb and creamy frosting.

They’ve come up with an interesting twist using their cupcakes and ice cream – it’s called a “Cupcake Shake.”  Take a cupcake, add ice cream, whir it in the blender, and voila – a cupcake shake!  The owners said the Red Velvet Cupcake Shake has been flying out the door.

Speaking of ice cream, they get their ice cream delivered weekly from “Max & Mina’s” in Flushing.  Known for inventive, bold flavors, Max & Mina’s offerings the day I visited were Dark Chocolate, Madagascar Vanilla, and Cookie Monster.  Just as you might imagine, Cookie Monster ice cream is blue and studded with Oreos, chocolate chips, and graham crackers.  It was really good!  But being the vanilla snob that I am, I turned all of my attention there.  And let me tell you, it did not disappoint. Rich, creamy, and full of intense vanilla-bourbon flavor – I emptied the cup in no time flat.

Open only a little over two months now, the restaurant is humming along. Prices are reasonable and decorated in warm earth tones; Bucu sets itself apart from traditional fast food operations. Even though you order at the counter, your meal is delivered to the table when ready.  All the food is made from scratch, and all the confections made daily in-house. The owners are on-site and hands-on.

When I asked Rick how he came up with the name (after all, it is a little unusual), he said he toyed with other, more traditional, names but thought Bucu would grab attention and draw people in. That it will, and the food will keep them coming back.
